Living off-the-grid means providing for one's electrical, sewage and disposal, water, and gas needs oneself rather than connecting to community hookups. This removes the need for massive city infrastructure to provide these things.

For example, you might have a catchment system for collecting rain water off of your roof, using solar gain from sun-facing windows for heating, composting toilets, hauling your own trash (perhaps transforming it through composting, freecycling, re-using, and re-selling), hauling propane, and generating electricity through solar panels.
